'Of Nikolaos' — Nicholas, 'victory of the people' — in the genitive, 'son of'. The name of the sailors' saint, the most useful patron a seafaring nation could have.
The history of Nikolaou
Saint Nicholas — Nikolaos, the wonder-worker of Myra — is the patron of sailors, and in a nation that lived by the sea no saint was invoked more, his name given to countless sons. Nikolaou is the genitive, 'of Nikolaos', a common Greek surname, and the saint himself would travel west to become, by another road, Santa Claus.
